Here are all the horrible vegetables our mothers made us eat or “No Dessert!” and all the ones we’re now instructed to eat in order to live long and prosper. Brassicas takes the unglamorous Brussels sprout and tosses in pancetta and a fig glaze and suddenly it’s the star of the plate.
