Broas de Mel

Makes about 36 cookies

Bolo de mel is rich molasses cake served on special occasions in Madeira. These cookies are easy enough for everyday cooking and have a similar spicy profile.

 Ingredients

  • Molasses 1/4 cup
  • Brown Sugar ¾ cup
  • Butter 1 cup
  • Egg 1 large
  • Cinnamon 1 tsp
  • Ground Cloves 1/8 tsp
  • Ground Fennel a pinch
  • Ground Nutmeg a pinch
  • All-Purpose Flour 2 cups
  • Baking Soda 1 tsp
  • Boiling Water ½ cup

Cook It

  1. Preheat the oven to 350˚ F.
  2. Beat together the molasses, sugar and butter until well combined. Add the egg and beat again to combine.
  3. Add the spices, flour and the baking soda dissolved in the boiling water. Stir to combine well but do not overmix.
  4. Drop heaping tablespoons of batter onto two greased cookie sheets, leaving room for the cookies to spread.
  5. Bake for 15 minutes. Allow to cool on a rack.
