Jamaican Jerk Marinade

Makes about 2 cups

This spicy marinade will transform chicken, pork or ribs with an explosion of flavour.

Ingredients

  • Onion 1, roughly chopped
  • Scallions chopped, 2/3 cup
  • Garlic 2 cloves, chopped
  • Dried Thyme ½ tsp
  • Salt 1 tsp
  • Ground Allspice 1 ½ tsp
  • Ground Nutmeg ¼ tsp
  • Ground Cinnamon ½ tsp
  • Habanero Pepper minced, ½ tsp
  • Black Pepper 1 tsp
  • Green Tabasco Sauce 5 drops
  • Soy Sauce 2 Tbs
  • Vegetable Oil 2 Tbs

 

Cook It

 

  1. Blend all ingredients in a food processor. Rub into the meat of your choice and marinate in a closed ziplock bag for a minimum of 4 hours, or overnight. Cook meat on a barbecue or bake in a 450˚F oven.
