Spiced Red Cabbage Relish

Makes about 3 cups


  • Red Cabbage 1/2 head, shredded
  • Garlic 1 clove, crushed
  • Red Hot Chile 1, finely chopped
  • Red Wine 100 ml
  • Brown Sugar 2Tbs
  • Fresh Ginger 1″ piece, grated
  • Juniper Berries 6, crushed
  • Bay Leaf 1
  • Cloves 2
  • Lemon Juice and Zest of 1
    1. In a saucepan, combine the shredded cabbage, garlic, chile pepper, red wine, red wine vinegar, brown sugar and lemon juice.
    2. Grate the ginger into a piece of cheesecloth, add the juniper berries, bay leaf, cloves, cinnamon stick and the lemon zest.
    3. Tie the cheesecloth and place it in the pan.
    4. Bring to a boil, then reduce to a simmer. Cook for 20 mins until the cabbage is soft and there is very little liquid left.
