When the pandemic put British wedding cake baker Lucy Burton’s catering business on hold and the restaurants she represented as a PR director closed indefinitely, she realized that if people couldn’t go out to eat cake, she needed to get the cake to them. Working out of her home kitchen, she offered a weekly changing menu of three or four different items — including cakes, brownies, cookies and confectionery. Her customers ordered boxes for themselves but most ordered boxes for others, with Lucy’s handwritten notes saying things like I love you, I miss you, I’m here for you, We will be together again enclosed. Her business grew into something unexpectedly successful and one she plans to continue indefinitely. Says Lucy: “There are so many times in life where work, study, relationship, travel, illness or clashing diaries separate us from those who we love. I hope the recipes and packaging instructions that follow will inspire you to bake and send treats to the loved ones that you can’t see as often as you would like. I think it might surprise you how much it means to them.”
