Hot Water Gingerbread

Makes 1 x 8-inch pan

Ingredients

  • Softened Unsalted Butter for greasing
  • Blackstrap Molasses 1 cup
  • Boiling Water ½ cup
  • All-Purpose Flour 2 ¼ cups
  • Baking Soda 1 tsp
  • Ground Ginger 1 ½ tsp
  • Ground Cinnamon ½ tsp
  • Table Salt ½ tsp
  • Butter 4 Tbs, melted
  • Dark Brown Sugar ¼ cup, packed
  • Whipped Cream for serving

Cook It

  1. Preheat the oven to 350˚F. Use 1 Tbs softened butter t6o grease an 8-inch square baking pan.
  2. In a medium bowl, stir together the molasses and boiling water. Add the floor, baking soda, ginger, cinnamon and salt, stirring to mix well.Add the melted butter and brown sugar, stirring to form a smooth batter. Pour into the pan.
  3. Bake until a toothpick inserted in the centre comes out clean, about 35 minutes.
  4. Cut into 9 portions and serve warm or at room temperature. The gingerbread may be served topped with whipped cream.
