Baked Oysters with Garlic Butter Breadcrumb Crust

Serves 4

A fabulous way to serve Pacific Coast oysters.

 Ingredients

  • Unsalted Butter ¼ lb plus 4 Tbs
  • Garlic 1 head, peeled, finely chopped
  • Oysters 24 medium, freshly shucked on the half shell
  • Breadcrumbs 10 oz
  • Pernod 2 tsp
  • Dried Mixed Herbs1 tsp
  • Dried Dill 1 tsp

Cook It

  1. Preheat the oven to 375˚F.
  2. Melt the butter over low heat. Add the garlic and slowly sauté until soft and fragrant. Mix in the remaining ingredients.
  3. Spread a small amount of the mixture on each of the shucked oysters. Use a couple of muffin tins to balance each oyster shell on a cup. Bake for 5 minutes then increase the heat to broil and bake until golden brown. Serve immediately.
