Bolo de mel is rich molasses cake served on special occasions in Madeira. These cookies are easy enough for everyday cooking and have a similar spicy profile.
Ingredients
- Molasses 1/4 cup
- Brown Sugar ¾ cup
- Butter 1 cup
- Egg 1 large
- Cinnamon 1 tsp
- Ground Cloves 1/8 tsp
- Ground Fennel a pinch
- Ground Nutmeg a pinch
- All-Purpose Flour 2 cups
- Baking Soda 1 tsp
- Boiling Water ½ cup
Cook It
- Preheat the oven to 350˚ F.
- Beat together the molasses, sugar and butter until well combined. Add the egg and beat again to combine.
- Add the spices, flour and the baking soda dissolved in the boiling water. Stir to combine well but do not overmix.
- Drop heaping tablespoons of batter onto two greased cookie sheets, leaving room for the cookies to spread.
- Bake for 15 minutes. Allow to cool on a rack.
