Çılbır is a classic Turkish breakfast dish that offers a delightful medley of textures and flavours. If you don’t have Aleppo pepper, smoked or sweet paprika can be substituted.
Ingredients
- Plain Yogurt ¼ cup
- Garlic ¼ clove, crushed
- Salt ½ tsp
- Egg 1 large
- White Vinegar 1 tsp
- Butter 1 Tbs
- Aleppo Pepper 1 tsp
- Sumac ½ tsp
- Pita Bread for serving
Cook it
- Mix the garlic and salt into the yogurt in a small saucepan and heat gently until lukewarm. Set aside.
- In another pan, melt the butter with the sumac and Aleppo pepper. Set aside.
- Bring a small pan of water to a simmer. Add the vinegar and swirl to mix. Slide the egg into the water and poach until the white is set, about 3 minutes.
- Pour the yogurt into a serving bowl, slide in the poached egg and top with the spiced butter. Serve with toasted pita bread.
