Wasabi Cucumber Pickles

Makes about 2 cups

Quick pickles to add a spicy kick to sandwiches or meals.


  • Cucumbers 2
  • Sugar 1 Tbs
  • Salt 1 tsp
  • Wasabi Paste 1 Tbs
  • White Vinegar 1 Tbs


Cook It

  1.  Wash and dry the cucumber. Remove a few strips of peel to create contrasting stripes, then slice into rounds, or half moons if the cucumbers are large.
  2. Put the cucumbers into a ziplock bag with the sugar, salt and wasabi paste. Massage gently to mix. Squeeze out the air and seal the bag. Allow to marinate in the fridge overnight, or for at least four hours to develop flavour. The pickles will keep for a few days but will lose their crispness as they mature.
