Mint-Lime Rickey

Serves 4

A refreshing drink on a hot summer day.

Ingredients

  • Limes 2
  • Mint Leaves a small bunch
  • Ginger 1“ piece, peeled and coarsely chopped
  • Sugar 1/2 cup
  • Ice Cubes to serve

Mix It

  1. Using a sharp knife, remove skin and white pith from the limes.
  2. Combine limes, mint leaves, ginger, sugar, and 2 cups water in a blender and blend until smooth. Pour into chilled glasses over ice.
