- Salmon 8 oz, sushi grade
- Limes juice of 2
- Aji Amarillo Paste 1 Tbs
- Fresh Hot Red Chile 1, seeded and thinly sliced
- Fresh Ginger grated, 2 tsp
- Soy Sauce 1 tsp
- Salt and Pepper to taste
- Cilantro chopped, 2 Tbs
- Slice the salmon as thinly as possible and lay on a plate.
- Whisk together all other ingredients except the cilantro.
- Pour the dressing over the fish, garnish with cilantro and serve immediately.
