Creamy fish soup is a classic Scandinavian comfort food. You can vary the soup according to what fish and seafood — fresh or frozen — is available.
Ingredients
- Salmon Fillet 250 g, cut into cubes
- Cod Fillet 250 g cut into cubes
- Onion 1 small, finely chopped
- Garlic 1 clove, finely chopped
- Potatoes 2 medium, chopped
- Butter 4 Tbs
- All-Purpose Flour 3 Tbs
- Fish Stock 4 cups, warmed
- Milk 1 cup
- Shrimp 125 g peeled
- Sour Cream 1 cup
- Salt and Freshly Ground Black Pepper to taste
- Nutmeg a pinch
- Chopped Chives for garnish
Cook It
- Heat the butter in a deep pot and sauté the chopped onion until translucent.
- Add the garlic and sauté for a minute more, until the garlic is fragrant.
- Stir in the flour.
- Gradually add the warmed fish stock, whisking well to avoid lumps.
- Add the milk and potatoes and simmer until the potatoes are very soft.
- Add the cod and salmon and cook until just opaque, about 5 minutes.
- Add the shrimp and cook for a few minutes more.
- Stir in the sour cream. Add the nutmeg and season to taste with salt and pepper.
- Garnish with the chives before serving.
