This mango and cardamom lassi is sunshine in a glass! It’s the kind of drink that cools you down and awakens your taste buds with every sip.
Ingredients
- Milk 1½ cups
- Fresh Mango 1 cup, diced
- Sugar 1 cup
- Ground Cardamom ½ tsp
- Vanilla Extract 1 tsp
- Honey to rim glasses (optional)
- Tajín to rim glasses (optional)
- Puréed Mango 1½ cups
- Greek Yogurt 1 cup
- Mint 4 sprigs, for garnish (optional)
- Dried Mango 4 slices, for garnish (optional)
- Whipped Cream 1 cup, for garnish
- Saffron Threads for garnish
Mix It
- Warm milk in a small saucepan to 98°F. Whisk in fresh mango, sugar, cardamom and vanilla until well combined. Remove from heat and steep for 3–5 minutes to infuse the flavours. Strain the mixture through a fine-mesh sieve to remove any solids, then refrigerate for 50 minutes, until cold.
- Meanwhile, rim four glasses with honey and Tajín, if desired. Place glasses and a high-powered blender jug in the fridge for 10 minutes to chill.
- Pour the milk mixture into the cold blender. Add puréed mango and yogurt. Blend on high speed until smooth, creamy and frothy.
- Pour the lassi over ice into chilled glasses. Garnish each with mint and dried mango (if using), then top with whipped cream and saffron threads. Serve immediately.
