Ingredients
- Red Cabbage 1/2 head, shredded
- Garlic 1 clove, crushed
- Red Hot Chile 1, finely chopped
- Red Wine 100 ml
- Brown Sugar 2Tbs
- Fresh Ginger 1″ piece, grated
- Juniper Berries 6, crushed
- Bay Leaf 1
- Cloves 2
- Lemon Juice and Zest of 1

- In a saucepan, combine the shredded cabbage, garlic, chile pepper, red wine, red wine vinegar, brown sugar and lemon juice.
- Grate the ginger into a piece of cheesecloth, add the juniper berries, bay leaf, cloves, cinnamon stick and the lemon zest.
- Tie the cheesecloth and place it in the pan.
- Bring to a boil, then reduce to a simmer. Cook for 20 mins until the cabbage is soft and there is very little liquid left.
